    Colin's empire biscuits

    • 250g plain flour, plus extra for dusting
    • 125g icing sugar
    • 125g cornflour
    • 250g unsalted butter
    • 100g raspberry jam
    • 10 glacé cherries, halved
    • Icing
    • 175g icing sugar


    1. Preheat the oven to 200C, gas mark 6. Put the flour, icing sugar and cornfl our in a large bowl and rub in the butter with your fi ngertips until it forms a dough.
    2. Put on a floured surface and roll with a floured rolling pin until about 6mm thick. Use a 4–5cm cutter to cut 40 circles. Put on trays and bake for 10–12 minutes. Take out just before they turn golden brown. Cool on a rack.
    3. To make the icing, sift the icing sugar into a bowl, add 1 tbsp water and stir until thick and glossy (you may need to add a few drops of water). Sandwich jam between the undersides of two biscuits. Then top with the icing and half a glacé cherry.
