Jam

Jam

Made from a combination of whole fruit (for flavour, texture and colour) that is crushed or mashed and sugar (to preserve the fruit), a wide variety of jams are available in Waitrose. Choose from apricot, blackcurrant, raspberry, seedless raspberry or strawberry. Black cherry, apricot, blackcurrant and raspberry reduced sugar jams are also available.

Uses: Spread on toast, bread, crumpets or muffins. Use to fill sponge cakes and to make fruit glazes for tarts, cakes and pastries.

To store: Keep in a cool dark place and use by the best before date.

Apricot or red fruit glaze

Fruit glazes can be used to add an attractive sheen to tarts and pastries or to help marzipan adhere to fruit cakes prior to icing. To make the glaze, melt 6 tbsp of jam (use apricot for chocolate and fruit cakes and red fruit jam for fruit tarts) in a pan until warmed right through. Press the warm jam through the sieve, return the sieved jam to a clean pan and add 2 tbsp cold water, bring to the boil and then brush over the cake, tart or pastry using a pastry brush.
