Easy tuna salad

Serves: 2
400g can essential Waitrose Cannellini Beans, drained and rinsed
200g can essential Waitrose Tuna Steak in Olive Oil, drained and oil reserved
100g essential Waitrose Cherry Tomatoes, halved
4 essential Waitrose Salad Onions, sliced
1 tbsp essential Waitrose White Wine Vinegar
½ tsp essential Waitrose Dijon Mustard
1 essential Waitrose Little Gem Lettuce, washed and torn
½ x 25g pack flat leaf parsley, chopped
1. Mix together the cannellini beans, tuna, tomatoes and salad onions. Whisk 2 tbsp reserved tuna oil, vinegar and mustard, and season. Toss into the tuna mixture.
2. Place the lettuce on 2 plates, top with the tuna mix and sprinkle with parsley. Serve with crusty bread.
