The signature dish of Kashmiri cuisine, this slow-cooked version creates deliciously mellow aromatic flavours and makes the meat wonderfully tender
Serves: 2 - 3
1 tbsp oil
300g pack Spice Tailor Rustic Rogan Josh
1 onion, sliced
1 green pepper, diced
330g pack diced lamb shoulder
3 tomatoes, cut into wedges
150g Amira Pure Basmati Rice
1. Preheat the oven to 180°C, gas mark 4.
2. Heat the oil in a frying pan and fry the spices in the rogan josh kit for 30 seconds. Add the onion, pepper and lamb, and fry for 5 minutes. Stir in the rogan josh base sauce and cook for 2-3 minutes.
3. Stir in the sauce sachet with 100ml water and the tomatoes, and bring to the boil. Transfer to an ovenproof casserole dish, cover and cook for 1½ hours or until the lamb is tender.
4. Meanwhile, cook the rice according to the pack instructions, drain and serve with the rogan josh.
