Quinoa salad with feta and avocado

2 little gem lettuces, leaves separated
250g pack quinoa
chickpeas, bulgar wheat & rice mix
50g essential Waitrose Greek light salad cheese, crumbled
1 x ½ small avocado, cut into cubes
40g Waitrose seed & sun dried tomato salad topper
2 tbsp Righteous lemon & mustard seed dressing
1. Scatter the lettuce leaves over a large plate and top with the quinoa mix.
2. Add the cheese, avocado and salad topper. Drizzle with the dressing and serve.
