    Raw garden salad with mature cheddar

    Make the most of summer with this delicious salad.

    Serves: 2


    • 1½ tbsp extra virgin olive oil
    • 2 tsp white wine vinegar
    • 1 tsp dijon mustard
    • 1 courgette
    • 60g raw shelled garden peas
    • 100g essential Waitrose cherry tomatoes, halved
    • 120g Growers’ Selection sweet english salad
    • 125g mature cheddar
    • 2½ tbsp pumpkin seeds


    1. In a bowl, whisk the olive oil, vinegar and mustard; season.
    2. Halve the courgette lengthways then slice; toss it into the dressing with the peas and tomatoes. Leave to marinate for 10 minutes.
    3. Gently toss in the salad leaves, add the cheddar in chunks and scatter with pumpkin seeds.
