Roast salmon with pesto crumb topping

Serves: 2
2 essential Waitrose Scottish Salmon Fillets
1 slice Hovis Seed Sensations Soft Granary Batch Bread
2 tbsp Filippo Berio Sun Dried Tomato Pesto
1 tbsp olive oil
1 small onion, sliced
200g essential Waitrose Frozen Extra Fine Whole Green Beans
25g toasted flaked almonds
1. Preheat the oven to 200°C, gas mark 6.
2. Place the salmon on a greased baking tray. Make breadcrumbs with the bread using a food processor and mix with the pesto, press onto the salmon and bake for 15 minutes.
3. Meanwhile, heat the oil in a frying pan and fry the onion for 3 minutes, add the beans and almonds and fry for a further 3-4 minutes, season. Serve with the salmon.
