Crispy fried eggs, with runny golden yolks, sandwiched between rounds of crusty bloomer bread may be the ultimate comfort breakfast. Whether you prefer yours sunny-side up or over-easy, fried eggs also add oomph to salads, potatoes, lentils, and rice dishes. 

The fresher your eggs the easier they are to cook as the protein in the egg white stays
in a neater shape when cracked. Usually fried in sunflower or rapeseed oil, you can also use bacon fat left in the pan or a knob of butter. If you’re adding a fried egg to a salad or grains how about using some olive oil?  Eating curry or dhal? You might enjoy frying your eggs in coconut oil for a lighter flavour.

Ingredients

1 tbsp olive oil

1 medium egg

Method

1.  Heat the oil in a non-stick frying pan until very hot.

2.  Crack the egg and cook for about 2 minutes, until
the edges are golden brown. Baste the egg white
with the hot oil to cook through.
