Bean & veg ratatouille

1 tbsp oil
1 small onion, chopped
½ red pepper, diced
1 small courgette, diced
400g can essential Waitrose Mixed Bean Salad, drained and rinsed
600g carton New Covent Garden Soup Co Minestrone Soup with Pancetta & Pecorino or 600g Waitrose Minestrone Soup
1. Heat the oil in a large saucepan and fry the onion, pepper and courgette for 3 minutes.
2. Add the mixed beans and soup, cover and cook for 5 minutes, season. Serve with crusty bread
