    Beetroot raita

    Serves: 6 as a side


    1 medium raw beetroot (about 75g), peeled and coarsely grated

    100g natural yogurt

    1 tbsp lemon juice

    1 tbsp pomegranate seeds


    1. Mix all the ingredients in a bowl. Season and serve alongside the squash fritters.
