Cajun chicken and winter vegetables with mash

500g essential Waitrose Winter Vegetable Mix
800g pack essential Waitrose British Chicken Thighs
1 tbsp Cajun seasoning
1 tbsp oil
3 tbsp maple syrup
900g essential Waitrose Potatoes
100ml essential Waitrose Semi Skimmed Milk, hot
1. Preheat the oven to 200ºC, gas mark 6. Place the vegetable mix in a roasting tin. Score the thighs and sprinkle with the Cajun seasoning, and add to the tin.
2. Toss in the oil and maple syrup. Roast for 30 minutes until the chicken is cooked through with no pink meat.
3. Cook the potatoes in boiling water for 15-20 minutes, drain and mash with the milk. Serve with chicken and vegetables.
