Ingredients

250g plain flour, plus extra for dusting

125g icing sugar

125g cornflour

250g unsalted butter

100g raspberry jam

10 glacé cherries, halved
Method

Preheat the oven to 200C, gas mark 6. Put the flour, icing sugar and cornfl our in a large bowl and rub in the butter with your fi ngertips until it forms a dough.

Put on a floured surface and roll with a floured rolling pin until about 6mm thick. Use a 4–5cm cutter to cut 40 circles. Put on trays and bake for 10–12 minutes. Take out just before they turn golden brown. Cool on a rack.

To make the icing, sift the icing sugar into a bowl, add 1 tbsp water and stir until thick and glossy (you may need to add a few drops of water). Sandwich jam between the undersides of two biscuits. Then top with the icing and half a glacé cherry.
