Essential sweet and sour pork

Ready in 20 minutes. Make it crunchy with a handful or two of cashew nuts and a bunch of sliced salad onions.

300g essential Waitrose Easy Cook Long Grain rice
1 tbsp essential Waitrose Vegetable Oil
450g essential Waitrose British Pork Thin Cut Loin Steaks, diced
300g pack essential Waitrose Vegetable Stir Fry
500g jar essential Waitrose Sweet & Sour Sauce
227g can essential Waitrose Pineapple Slices in Fruit Juice, drained
1. Cook the rice according to pack instructions.
2. Meanwhile, heat the oil in a large frying pan or wok and stir fry the pork for 5 minutes. Add the stir fry vegetables and cook for 4-5 minutes. Stir in the sweet and sour sauce.
3. Cut the pineapple into chunks and add to the pan, then cook for 2 minutes. Serve with the rice.
As an alternative to the pork, try this recipe using 400g chicken breast chunks (make sure the chicken is cooked though with no pink meat). Instead of the prepared stir fry vegetables, you could use broccoli florets, sliced mushrooms, courgettes and baby sweetcorn in this recipe.
