Onion and Cider Soup
Ingredients

1kg white onions, finely sliced

75g unsalted butter
-
500ml dry cider
-
1 sprig thyme
-
1 bay leaf
-
1 litre chicken stock
-
200ml double cream
Method

In a pan, sweat the onions in the butter until golden brown. Add the cider and boil gently until reduced by half.

Add the thyme, bay leaf, stock and cream and simmer for 30 minutes. Season to taste and serve with fresh crusty French bread.
