    This Basque inspired dish is ready in 30 minutes

    • 2 tsp essential Waitrose mild & light olive oil
    • 2 essential Waitrose onions, finely sliced
    • 2 garlic cloves, sliced
    • 1 tsp thyme leaves,roughly chopped
    • 200g Cooks’ Ingredients grilled peppers in olive oil, drained
    • 3 tomatoes, quartered, deseeded and chopped
    • ¼ tsp paprika
    • 9 essential Waitrose eggs, lightly beaten
    • 3 tbsp roughly chopped flat-leaf parsley


    1. Heat the oil in a large frying pan over a medium-low heat. Sauté the onions for 8 minutes, until soft and translucent.
    2. Add the garlic and thyme; sauté for a couple more minutes then add the peppers and season. Cook, stirring from time to time, for 5 minutes. Stir in the tomatoes and paprika and cook for 5 minutes.
    3. Season the eggs and add to the pan. Cook gently until they form soft, scrambled curds – they should be creamy, not dry. Scatter with the parsley and serve immediately.
