    Rice pudding with marmalade

    A tart blackcurrant or raspberry jam would work equally well with the creaminess of this nursery pud.

    Serves: 6


    • 10g unsalted butter
    • 120g essential Waitrose short grain rice
    • 60g Cooks Ingredients vanilla sugar
    • 1 litre essential Waitrose whole milk
    • 8 tbsp essential Waitrose thick cut seville orange marmalade


    1. Preheat the oven to 150C, gas mark 2. Liberally butter an oven dish around 20cm x 25cm x 5cm.
    2. Combine the rice and sugar and tip into the dish. Pour in the milk and bake for 2 hours, stirring once halfway through cooking. Leave to cool a little before serving.
    3. Serve the rice pudding with a good dollop of marmalade.
