Root vegetable gratin

1 tbsp oil
1 Waitrose Duchy Organic Brown Onion, sliced
300g Waitrose Duchy Organic Sweet Potatoes, scrubbed and coarsely grated
1 clove garlic, crushed
2 Waitrose Duchy Organic Carrots, coarsely grated
1 Waitrose Duchy Organic Courgette, coarsely grated
1 Waitrose Duchy Organic Leek, sliced
180g reduced-fat soft cheese
100g Waitrose Duchy Organic Mature Cheddar Cheese, grated
1. Heat the oil in a large frying pan and fry the onion, sweet potatoes and garlic for 3 minutes. Add the remaining vegetables and fry for a further 5 minutes.
2. Stir in the soft cheese, and season. Transfer to a heatproof gratin dish and sprinkle with Cheddar. Place under a preheated grill for 3 minutes or until golden.
