Marinade

A mixture of ingredients which is poured over meat, fish or poultry before cooking and left for a specified amount of time to add flavour and also to tenderise, eg combine the marinade ingredients and pour over the chicken, leave for at least 30 minutes to allow the flavours to develop.

A marinade can also be used to baste food during cooking, eg grill the chicken, basting occasionally with the reserved marinade.

A marinade usually consists of liquids such as oil, orange juice, wine or vinegar and a combination of a wide selection of flavouring ingredients which may include garlic, herbs, citrus zest, chillies, honey or mustard.
