Cashew nuts

The cashew is a distant relative of the pistachio and mango and is grown mainly in Brazil and India. It is often roasted in salt to bring out the flavour. Kernels are available all year.

To store: Store in a cool dry place. Once opened store in an airtight container and consume within 7 days.

Uses: Best eaten as they are but often incorporated in savoury Chinese and Indian dishes.
