Lime leaves

Freeze dried kaffir lime leaves are available with herbs and spices. The kaffir lime tree is native to South East Asia and the leaves and the fruit zest are used in cookery. The leaves have a distinctive lime aroma and add a citrus flavour to sweet and savoury dishes.

Uses: Kaffir lime leaves are especially popular in chicken and fish dishes. They can also be added to sauces, puddings, cream and custards. Add a couple of leaves to long, cool drinks for a delicious lime flavour.

To store: Keep in an airtight jar, in a cool, dark place for up to 1 year.

To use: Kaffir lime leaves are used in a similar way to bay leaves - add them at the beginning of the cooking time and remove and discard just before serving.
