Port

Based on red wine, this popular after-dinner fortified wine is made in the Douro valley in northern Portugal. Other port-style drinks are produced in Australia, South Africa and America but strictly speaking should not be referred to as port.

Port is made by halting the production of Douro wine during fermentation and adding a grape-based spirit which gives the port its distinctive flavour and aroma. It varies in strength from 18-22% alcohol. Waitrose stock a wide selection of port including Waitrose Special Reserve Port, Warre's port Warrior Special Reserve and Waitrose Late Bottled Vintage Port.

Uses: Traditionally served after dinner with Stilton cheese, port also goes particularly well with mature strong cheese such as Cheddar. It can also be served chilled as an aperitif with roasted almonds or cashew nuts.
