Fresh, plump raspberries

Raspberries

Specialist varieties of this soft summer fruit mean it is now available all year round. Summer varieties include Glen Ample and Tulameen. Both have an excellent sweet flavour. Glen Ample produces a larger, darker berry, while Tulameen is a brighter red colour. Frozen raspberries and canned raspberries in syrup are also available.

Uses: Some traditional raspberry recipes include peach melba, trifle, summer pudding and linzertorte. Raspberries are also ideal for coulis and sauces.

To store: Raspberries only keep for a few days, even in the fridge. Serving at room temperature brings out the full flavour.

To prepare: Wash if necessary. Handle gently, using your fingers rather than a spoon.
