Tofu

Tofu

Also known as beancurd, tofu is a creamy white substance made from soya beans. Popular with vegetarians, especially in China and Japan, tofu is quite soft and has a similar consistency to solid jelly and a smooth, silky texture. It is in sold in two forms - firm tofu or ready marinated tofu. It has a bland flavour, but will take on any strong flavours from ingredients that it is cooked with.

Uses: Firm tofu is sold in blocks and can be sliced or diced and then used in stir-fries, salads, kebabs or soups. Plain tofu is best marinated before cooking to allow any flavours to be absorbed or it can be very bland.

To store: Keep tofu in the fridge for up to 5 days.

To cook: Tofu only needs to be cooked for 2-3 minutes - grill or stir-fry until it starts to turn a golden brown colour.
