Duchy easy organic pork chop roast

    • Preparation time: 10 minutes
    • Cooking time: 50 minutes
    • Total time: 1 hour 60 minutes

    Serves: 2

    Ingredients

2 Duchy Originals from Waitrose Organic British Pork Chops
2 Waitrose Organic Sweet Potatoes, peeled and cut into chunks
1 organic red onion, cut into wedges
1 organic garlic bulb, broken into unpeeled cloves
2 Waitrose Organic Dried Bay Leaves
150ml Duchy Originals from Waitrose Organic Herefordshire Reserve Dry Cider
2 tbsp Duchy Originals from Waitrose Organic Harvest Chutney
Organic broccoli or pointed cabbage, steamed, to serve

    Method

    1. Preheat the oven to 190ÂșC, gas mark 5. Place the pork chops in a small ovenproof dish with the sweet potatoes, red onion, garlic cloves and bay leaves.

    2. Pour over the cider, cover with foil and bake for 20 minutes. Remove the foil and bake for a further 30 minutes, until the pork is nicely browned and completely cooked through with no pink meat.

    3. Using a slotted spoon, lift the pork and vegetables onto 2 plates. Stir the chutney into the pan juices, spoon onto the plates and serve with steamed cabbage or broccoli. Enjoy with a glass of the remaining cider.
