    Real Orangeade

    Refreshing, tangy and cooling, this soft fizz – scented with lemon grass – is definitely not just for the kids.

    • Preparation time: 15 minutes
    • Cooking time: 10 minutes, plus cooling
    • Total time: 25 minutes, plus cooling 25 minutes

    Makes: 1 litre


    • 6 Oranges
    • 2 Lemon grass stalks, stems bashed
    • 1 Lemon, juice
    • 150g Granulated sugar
    • 600ml Soda water, chilled


    1. Grate the zest from 2 oranges; juice all 6. Place the sugar, lemon grass and orange zest in a pan with 300ml water. Bring gently to the boil over a medium heat; stir until the sugar dissolves, then simmer uncovered for 5 minutes until syrupy.
    2. Allow to cool. Once cool, stir in the orange juice and lemon juice and strain into a jug. This cordial will keep for up to 3 days in the fridge. To serve, half-fill glasses with orange cordial, top up with soda water and add ice.
