Chunky lentil & vegetable soup

1 litre vegetable stock
400g can essential Waitrose Lentils
400g can essential Waitrose Chopped Tomatoes
2 essential Waitrose Carrots, diced
1 large essential Waitrose Courgette, diced
1 x ½ 25g pack parsley, chopped
1. Place everything except the courgette and parsley in a large saucepan and bring to the boil, cover and simmer for 5 minutes.
2. Add the courgette and simmer for a further 5 minutes. Stir in the parsley and serve with crusty bread (optional).
