    Maple & almond grilled chicken

    800g pack essential Waitrose British Chicken Thighs
    Zest and juice of 1 lemon
    3 tbsp maple syrup
    50g Waitrose Flaked Almonds
    500g essential Waitrose New Potatoes, halved
    Knob of butter
    1 x ½ x 25g pack fresh chives, chopped


    1. Score the flesh of the chicken thighs and place in a roasting tin. Rub the skin with the lemon zest and season. Pour over the juice and maple syrup.

    2. Place under a preheated grill for 20-25 minutes or until cooked through (with no pink meat), turning occasionally. Add the almonds for the last 2-3 minutes of cooking.

    3. Meanwhile, cook the potatoes in boiling water for 15-20 minutes until tender. Toss in the butter and chives and season. Serve with the chicken.
