Paprika mackerel with tabbouleh

50g Waitrose LOVE Life bulgar wheat
3 tomatoes, finely diced
4 salad onions, finely chopped
1 x ¼ cucumber, finely diced
1 courgette, finely diced
50g flat leaf parsley, finely chopped
1 tbsp olive oil
1 lemon, juice; zest of ½
1 x ¼ tsp ground allspice
2 tsp clear honey
1 tsp smoked paprika
4 frozen mackerel fillets, defrosted
1. Preheat the grill to high. Put the bulgar wheat in a bowl and cover with 500ml freshly boiled water, stand for 5 minutes, then drain. Tip into a bowl with the vegetables and parsley. Mix ½ tbsp oil with the lemon juice, allspice and honey. Pour over the bulgar wheat, season and toss together.
2. Mix the remaining oil with the lemon zest and paprika. Place the mackerel fi llets on a foil-lined baking sheet and brush with the mixture. Grill for 3 minutes on each side. Serve with the tabbouleh salad and some lemon wedges, if liked.
