    Roast veggie moussaka

    • Total time: Ready in 30 minutes 30 minutes

    Serves: 4


    350g essential Waitrose New Potatoes, cut into ½cm thick slices
    1 tbsp essential Waitrose Vegetable Oil
    750g bag frozen essential Waitrose Grilled Vegetable Mix
    400g can essential Waitrose Chopped Tomatoes
    250g essential Waitrose Greek Style Natural Yogurt
    1 Waitrose Free Range Egg, beaten
    50g essential Waitrose Cheddar, grated


    1. Preheat the oven to 220°C, gas mark 7.

    2. Cook the potatoes in  boiling water for 8–10 minutes until just tender, then drain.

    3. Meanwhile, heat the oil in a large frying pan and fry the vegetable mix for 5 minutes, add the tomatoes and cook for 2 minutes. Transfer to a shallow ovenproof dish, top with a single layer of potatoes, then season.

    4. Mix the yogurt, egg and seasoning together and spread on the potatoes. Sprinkle with cheese and bake for 15–20 minutes until golden.
