    Herbed Puy Lentils

    This is good with fish but also makes a protein-rich, meat-free option that marries well with the other dishes. To enhance the dish for vegetarian guests, serve goat's cheese or slivers of Parmesan with it. Make up to 2 hours ahead.

    Serves: 6

    Ingredients

    • 1tbsp chopped rosemary
    • 1tbsp chopped oregano
    • 300g puy lentils
    • 1 level tsp vegetable bouillon powder
    • 2 tbsp olive oil
    • 2 sticks celery, chopped
    • 1 large onion, chopped
    • 1 tbsp chopped parsley
    • Salt and freshly ground black pepper

    Method

    1. Put the lentils and bouillon powder in a pan, cover with lots of cold water, bring to the boil and simmer, covered, for 15-20 minutes until al dente.
    2. Meanwhile, heat the olive oil in a frying pan over a medium heat. Add the celery and onion and fry gently for 10-15 minutes until soft and golden. Stir in the herbs and take off the heat. When the lentils are done, drain, stir in the onion mixture and season. Serve hot, warm or cold.
