Oregano

Oregano

A close relation to the herb marjoram, and in fact referred to in some countries as wild marjoram, oregano has a slightly spicy, almost smoky flavour. It has dark green, oval-shaped leaves and has a stronger flavour than marjoram, but the two herbs are interchangeable.

Uses: Oregano is especially popular in Provençal and Italian cookery and can be used in casseroles, soups, quiches, pizzas, tomato dishes and with fish.

To prepare: Remove the leaves from the stem and add the leaves whole or chop.
