Tuna is a meaty fish with firm flesh and distinctive flavour due to its high oil content. It’s a perfect option for one of your oily fish portions per week. Popular types of tuna are Albarcore and Yellowfin, which can be bought as fillets or steaks.

How to cook tuna

Tuna is a fish that needs very little cooking to ensure it stays moist. It’s best to cook tuna fillets quickly over a high heat or slowly over a very gentle heat.

Pan-fry

Fry tuna fillets in olive oil, cooking on a high heat for approximately 2 minutes on each side. The fish should be opaque on the outside but slightly translucent in the centre.

Griddle

Put tuna steaks into a heated griddle pan on a high heat for about 2 minutes on each side. If preferred cook on a low heat for 5 minutes
on each side.

Bake

Wrap tuna steaks in foil with seasoning and a drizzle of olive oil or place in a casserole dish with a little wine or stock, then cover and cook in a preheated oven  set to 200°C, gas mark 6,  for 15-20 minutes or until tender.

How to add flavour
A simple squeeze of lime, soy sauce, sprinkling of chillies or drizzle of olive oil will turn this robust flavoured fish into an even more amazing dish. Tuna also works well with Mediterranean vegetables such as tomatoes, peppers and courgettes for a Provençal-style dish.
