Cook's tips 

1) Using floury potatoes such as maris piper or desiree should give the mash a smoother texture, requiring less butter, milk or cream to be added

2) Leave your boiled potatoes to steam-dry for a few minutes after draining to evaporate excess water. Return to the pan over a low heat if they’re very wet

3) Spruce up your mash by stirring through some cheese, mustard, sautéed leeks, fried kale or fresh chopped herbs just before serving
