Peel and chop the potatoes into even chunks. Put in a large pan of salted water and bring to the boil; simmer for 12-15 minutes or until tender. Drain in a colander.
Put the unsalted butter into the pan; melt over a low heat. Tip in the potatoes and mash together, then season, adding a splash of milk if needed to loosen. Stir through 100g grated mature Cheddar cheese if using.
