Ingredients

  • 1 large cauliflower
  • tbsp Vegetable oil
  • ½ tsp ground turmeric
  • 2 tbsp 0% fat Greek yogurt
  • tbsp lemon juice
  • Coriander leaves (optional)

Method

  1. Slice the cauliflower, then chop into small pieces (less than 1cm). Put the vegetable oil in a pan over a low heat, add the ground turmeric and stir for 30 seconds. Add the cauliflower; stir fry for 5 minutes over a medium heat until soft. Add 250ml water, bring to the boil, then cover and simmer for 10 minutes. Allow to cool, then put in a blender with the Greek yogurt and lemon juice. Blend until smooth; season. Top with a swirl of yogurt and coriander leaves, if liked.
