Ingredients

  • 4 large sweet potatoes
  • 1 tbsp sesame seeds
  • 40g unsalted butter
  • tbsp soy sauce
  • 3 salad onions

Method

  1. Peel and roughly chop the sweet potatoes and put in a pan of salted water. Bring to the boil, then reduce the heat and simmer for 20-25 minutes until tender.

  2. Toast the sesame seeds in a dry pan until fragrant (1-2 minutes). Drain the potatoes, then return to the hot pan with the unsalted butter and soy sauce; mash until smooth. Taste and season if needed. Finely slice 3 salad onions, stir 1⁄2 through the mash and scatter the rest over the top with the sesame seeds.
