Rest

To allow cooked meat to sit for a few minutes before serving eg cover the cooked beef with foil and allow to rest for 10 minutes before carving. Resting allows the temperature of the meat to even out and the fibres to relax which makes it easier to carve.

This term can also refer to other dishes such as pies and tarts to allow the heat to even out before serving.
