Fish roe (black and red)

An economical alternative to genuine caviar, different varieties of fish roe are available including the bright red coloured Lumpfish caviar (sold in jars) which is sometimes referred to as mock or Danish caviar. It is the roe of artic lumpfish which are dyed to give them their distinctive appearance. Herring roes are also available in jars and are the more familiar black colour.

Uses: As for caviar - serve it on thin toast with a little butter or on blinis (small Russian pancakes) with a little soured cream as an appetiser and offer with a glass or two of chilled sparkling wine or a glass of vodka before a special meal. Other popular accompaniments are chopped onion, chopped hard-boiled egg white or a squeeze of lemon juice.

To store: Store in the fridge and once opened keep in the fridge for 1-2 weeks.
