Goose fat
A versatile fat, which enhances the flavour of a variety of savoury dishes. Goose fat has the consistency of butter and can be used in cooking or as a spread. Waitrose sell Catusse graisse d'oie goose fat in 350g packs.
Uses: Goose fat can be used to baste roast meats such as goose, chicken or turkey. It can be included in stuffings for poultry such as sage and onion or sausagemeat and apricot. Potatoes roasted in goose fat make a delicious accompaniment to any roast meat.
To store: Keep in the fridge and consume by the use by date.
