Ridged grill pan

A heavy-based grill pan with ridges running across it. A ridged grill pan is used to char-grill food until it has seared, slightly charred lines running across it (usually meat, fish, vegetables or fruit). The ridges or grooves in a good ridged grill pan should be deep so that the food to be cooked can sit above the cooking juices or fat in the pan.
