MEAL MATHS – BAKED CHICORY WITH HAM & CHEESE

Ready in 35 minutes | Serves 2

  1. Preheat the oven to 220°C, gas mark 7. Slice the chicory in half lengthways, then drizzle the cut sides with olive oil and season.
  2. Preheat a large frying pan over a high heat and when smoking hot, place the chicory in the pan, cut-side down, and cook for 3-4 minutes until well charred. Pour in 100ml water, reduce the heat slightly and cover. Cook for 5-6 minutes, until the water has evaporated and the chicory is tender, then remove from the heat.
  3. Spread a thin layer of carbonara sauce over the base of a small ovenproof dish. Carefully wrap each chicory half in a slice of ham and arrange on top of the carbonara sauce in a single layer. Spread the remaining sauce on top and sprinkle over the grated Emmental. Bake for 25 minutes, or until golden, then rest for 5-10 minutes before serving. Delicious with a dressed green salad.
