MEAL MATHS - SPICY CHICKEN & CHORIZO SALAD

Ready in 45 minutes | Serves 4

SCROLL DOWN TO ADD INGREDIENTS

1. Preheat the oven to 190ºC, gas mark 5.

2. Tip the chicken casserole into a large roasting tin and cook for 40 minutes, until it is cooked through, the juices run clear and there is no pink meat.

3. Roughly chop the tomatoes, and cook the grains according to pack instructions.

4. Shred the chicken in the roasting tin, discarding the bones. Stir through the grains and tomatoes, then add the salad, ripping any larger leaves into bitesized pieces. Toss well to combine and serve.
