CHILLI & ORANGE PRAWN AND POTATO TRAYBAKE

1. Preheat the oven to 220ºC, gas mark 7. Finely shred the red cabbage and place in a colander over the sink. Rub the cabbage with about 1 tsp fine salt and leave to drain.
2. Tip the potatoes into a roasting tin and toss with the chilli and orange paste. Roast for 25 minutes, or until golden and tender. Stir the prawns into the potatoes and return to the oven for 4 minutes or until the prawns are pink, opaque and cooked through.
3. Squeeze any excess moisture from the cabbage and serve with the prawns and potatoes. Add lemon wedges on the side to squeeze over for extra flavour.
