WELCOME TO JUNE…
I have a distinct childhood memory of sitting in a hotel somewhere on the south coast, eating half a pink grapefruit. It was served as a starter in a snug, round metal bowl set atop a thick white tablecloth with no adornment. Things have changed. Today the UK is bursting at the seams with some of the most exciting and creative food on the planet: hand-pulled noodles from a street-food vendor, locally caught scallops cooked over fire, or buttery soft, ethically reared beef at one of the smartest tables.
British farmers are producing ingredients of the highest standards for both chefs and home cooks. So whether you’re barbecuing, hosting, baking a summery cake (page 110), exploring or cooking a simple midweek dinner (page 106), it’s worth taking a moment to appreciate just how wonderful what we eat now can be.
And as for that grapefruit, it still makes a wonderful starter – it just needs a little help from Ed Smith (page 24).
