Preparation: Wash hands after handling raw meat. Use separate kitchen utensils and surfaces for raw meat and cooked, or wash between uses. Unwrap and dispose of packaging carefully. All cooking appliances vary. This is a guide only.
Gas 7, 220°C, Fan 200°C 50 mins per 500g
Preheat oven. Remove all packaging. Place in a roasting tray in the centre of oven. Once cooked, take the joint from the oven, remove the crackling and cover with foil. Allow to rest for 20 minutes. Place the crackling back in the oven at 180°C (Gas 4, 160°C Fan) whilst the joint is resting. Cook thoroughly until the juices run clear and there is no pink meat. Do not reheat once cooled.
