The original ‘craft brewers’, the monks of the Saint Stefanus Monastery in Ghent have been making ale since 1295. Now brewed on behalf of the order by the Van Steenberge family, these beers are fermented using a unique strain of yeast before being ‘cellared’ for several months. Finally, the beers are bottle conditioned with live yeast, allowing them to develop additional character over time, much like a fine wine
