MEAL MATHS - MACKEREL PATE TOASTS

1. Peel the skin from the mackerel fillets and discard, together with any bones, then place the fish into a bowl and mash with a fork until no large pieces remain. 

2. Add the cream cheese and beat together using a wooden spoon. Slice 12 of the pickled cornichons in half lengthways and set aside, then roughly chop the rest of the cornichons and onions, and stir through the pâté. 

3. Slice the bread into 12 long slices and toast on both sides, spread with pâté and top with the halved cornichons. Delicious with some dressed salad leaves for a more substantial meal.
