POACHED EGG, FETA & AVOCADO FRITTERS

Ready in 10 minutes | Serves 2

SCROLL DOWN TO ADD INGREDIENTS

1. Reserve 2 tbsp of the grains in a bowl. Place the rest in a food processor with 1 egg and 25g of the feta. Pulse to make a textured paste. Season.

2. Warm 1 tbsp oil in a nonstick frying pan and make 4 fritters (approx 8cm each), using a spoon to shape them into rounds. Fry over a medium heat for 2-3 minutes on each side until golden.

3. Meanwhile, poach 2-4 eggs (depending on your appetite) for 3-4 minutes, until the whites are set and the yolks are done to your liking.

4. Spoon the avocado smash onto the fritters, top with an egg and crumble over the remaining feta. Sprinkle with the reserved grains and finish with ground black pepper and sea salt.
