This recipe reminds me of lazy weekend brunches in sunny California

This is my version of the burritos we’ve enjoyed as a family at roadside shacks around LA or San Diego. Often based on nondescript suburban streets, these casual joints serve up inexpensive food that’s perfect for a lazy brunch at home. 

We each like to build our own, mixing and matching the fillings to suit our tastes. Jackfruit is lovely if you’re vegan or not - the consistency is similar to pulled pork and it’s a great vehicle for other flavours. Here, I’ve used vegan streaky pieces to add oomph; they give a slight smokiness that works well with the other ingredients. 

This is the kind of filling brunch dish that will set you up nicely for the day. Napkins essential.
