WELCOME TO AUGUST…

Sunnertime and the living is easy. Or at least, that’s the goal. Hot weather calls for a different approach to eating: less turning on the oven, more taking things out of the fridge. Now’s the time to embrace that casual, deliciously chaotic approach to meals that sees sausage rolls, yesterday’s leftovers, olives, cherry tomatoes (token veg), crisps, quiche and probably some form of cake all happily jostling together with no care for course or convention (page 56). We’re not alone in responding to heat with a ‘more the merrier’ approach to flavour. Head to the Med, and tapas, cicchetti and small plates are an art form. As are the spritzes so often served alongside (page 66). If you’re heading in that direction, though, keep an eye on the finer details of what you’re ordering – andouillette or cheesy mash on pizza might not be what you had in mind (page 98), although it will make a good story afterwards.
